Frescobaldi Brunello Di Montacino

The village of Castelgiocondo overlooks the historic estate of the Frescobaldis in Montalcino: an ancient stronghold built in 1100 to defend the road leading from the sea to Siena. The property is one of the first 4 to begin producing Brunello di Montalcino in 1800, and its historic importance is represented on the label of Castelgiocondo by the figure of a condottiere from a celebrated fresco of the Sienese artist Simone Martini.

The artist’s depiction shows Guidoriccio da Fogliano, commander of the troops of Siena who in 1323 led the attack on the Montemassi castle; an historic moment that coincided with the initiation of the Frescobaldi family’s centuries-old adventure in the world of wine.

Tasting Notes:
CastelGiocondo has an intense, bright ruby-red color. Like every vintage, 2017 brought with it a wonderfully elegant quality. The bouquet features fruity aromas, particularly at the beginning, with notes of raspberry, blackcurrant and even pomegranate. The beautifully harmonious and alluring hints of violet and rose are truly wonderful. Gradually, its maturity becomes truly remarkable, revealing spiced hints of white pepper, clove and star anise, toasted notes and more complex roasted notes and hints of liquorice. On the palate, the tannic structure is dense and the mineral quality is wonderful. This is an incredibly harmonious wine with a long, persistent finish.

Inniskillin Vidal Pearl ~ 375 ml

Icewines made from the Vidal grape are noted for their honey, tangerine, apricot and pineapple flavors. When Vidal is aged in oak, it takes on rich overtones of vanilla, almonds and fresh baked bread. Icewine is a concentrated, intense wine that needs to be poured in small portions and should be given special consideration when combining with different foods. Vidal Icewine works beautifully in a glaze for caramelized grilled pork roast or as an accompaniment to fresh summer berries with cream, chocolate biscuits, a pear tart or a raspberry mousse. Some sweeter desserts may actually detract from the experience so it should not be paired with a food that is sweeter than the Icewine itself. It is frequently served as a course on its own as quoted in the early days by Icewine maker Karl Kaiser, “Icewine is much better as dessert than with dessert”. The major difference between Icewine and other dessert wines is acidity. While all dessert wines are sweet, only the best ones have balanced acidity as well. This crucial element not only adds to the enjoyment of Icewine, but also to its natural compatibility with cheese. Many cheeses pair brilliantly with Icewine because each cheese’s richness begs for that crucial acidity. Cheeses are inherently savory and sometimes salty and when prepared with the honeyed sweetness of Icewine, it creates a lovely balance that makes for a perfect match.

Aromatics of tropical fruit including mango and orange dominate, while on the palate an abundance of fruit flavors including peach, nectarine and citrus are balanced by crisp, bright acidity. Pairs well with blue veined cheese with dried fruit or fresh peaches or pears; roasted chicken with grilled peaches; fresh papaya and lime salsa with grilled white fish; traditional peach pie.

Winemaker Notes:
This unique Canadian product was harvested at the height of Canada’s crisp winter. Naturally frozen on the vine and then picked when the temperature drops to a frigid -10C (14F). Only a small amount of concentrated nectar can be squeezed from each bunch. The juice is then slowly fermented at an average temperature of 15C (59F) to achieve a rich, specialty wine know as Icewine.

Aromatics of tropical fruit including mango and orange dominate, on the palate fruit flavors including peach, nectarine and lemon are balanced by crisp, lively acidity.

Winemaker Notes:
Aromas of sweet fruits - plum, raspberry, and black cherry. Layers of spice and sweet tobacco/earth. A juicy burst on the palate of red berries and black currants framed with a beautiful tannin structure. A lively and complex mid-palate with mineral and spice notes that linger on the finish.

Crazy water flows from the slopes of the Santa Lucia mountains down the Salinas River, to the Pet Nat revival in Tin City, Paso Robles. They take the water from their backyard and create a delightful, delicious and totally natural bubbly wine.

Field Recordings Chenin
Central Coast, California

Field Recordings sourced grapes from five different Central Coast Chenin Blanc vineyards planted in the 1970s: Martin Brothers, Chalone, Cat Canyon, Jurassic Park and Shell Creek. All five of these vineyards are harvested and brought to the winery to be pressed immediately, before fermenting with spontaneous yeast. Fermented in a mix of 1000L German Oak Fuders, new and seasoned Acacia barrels as well as some stainless steel tanks. This old vine cuvee is a true snapshot of a lost era of California Viticulture.

Tasting Notes: Oyster shell, Granny Smith apples, chamomile and daffodil

Field Recordings PPP
Paso Robles, California

Field Recordings gathered pomace from 9 other wineries in the Paso Robles area and brought it all back to Tin City to make this wine. If you're not familiar with this style, it's made by rehydrating skins that have been crushed in production. They let the skins soak for a few days, then ferment. The result is a bubbly, low alcohol, super drinkable red wine. Yum.

Tasting Notes: Candied raspberries, Bonne Maman Mixed Fruit preserves, Lavender and Sage

Blink and you’ll think you’re in Bavaria. Founders went all in on tradition with their Oktoberfest, using imported German malts and hops with a beautiful lager yeast for the finish. Pours a gorgeous copper hue with a rich, malty and slightly sweet backbone. This version is akin to the beer poured in the early days of Oktoberfest and, yes, it adheres to the Reinheitsgebot. Oktoberfest is a brief moment of fall beer drinking beauty. The world's biggest fest started in Munich, Germany in 1810 to celebrate the marriage of the crown prince of Bavaria to Princess Therese von Sachsen-Hildburghausen. The party was so off-the-chain it became an annual 16 day festival from Mid-September to Early October. It's a time celebrate beer for beer's sake, with food and friends to kick off cooler weather.

Senor Sotol Artisanal Tequila

The sotol is distilled from the head of the Dasylirion plant, of the family Asparagaceae, known by the same name (or by the raramuris with the name of sereque) and which grows in the desert of northern Mexico.

This drink is produced in the states of Chihuahua, Durango and Coahuila. The conchos, tonos and anasazis have produced, for eight hundred years, fermented beverages from sotol, however, the drink as it is known today, occurs after the arrival of the Spaniards and their distillation equipment and methods.

The descendants of early Sotol producers narrate that in the 20's and 30's, Sotol production became the main activity in many regions of the Chihuahuan desert.

During the time of the Mexican Revolution, the State persecuted the Sotoleros to destroy their production, which gave tequila, beer and other imported distillates from the opportunity to take over the market.

Since September 2002, it has had the designation of origin and a regulation in its production in Mexican territory given by the Official Mexican Standard NOM-159-SCFI-2004.

Señor Sotol is produced in an old abandoned hacienda in the village of San Nicolás de Acevedo, close to the magic village Nombre de Dios, Durango by maestro Sotolero Juan Conde. The combination of our dasylirions selection comes along as a perfect balanced Sotol that contains the best characteristics of each one of our varieties.

Tasting Notes:
Smoked cacao, sweet tobacco, vanilla hints with a pepper finish. Smooth sweetness with a funky aftertaste.

Town Branch Bourbon hand-crafted to pay homage to the rich distilling history in Lexington Kentucky. Named for the Town Branch waterways upon Lexington was founded, and was once the site of much bourbon production. This unique expression of Town Branch has been finished in freshly decanted Kentucky Maple Barrel Stout barrels to add flavors of the beer alongside traditional bourbon flavors of oak, caramel, brown sugar, and cherry.
