Red Wine Poached Pears

1 cup sugar
2 bottles red wine (Zinfandel or Cabernet Sauvignon)—LW recommends an organic wine like Fetzer.
3 cinnamon sticks
5 cloves
5 allspice berries
10 peppercorns
2 - 2-inch pieces of orange zest
5 pears (firm but ripe)


Heat sugar, wine spices, and zest until sugar is dissolved. Peel whole pears and place them in wine mixture. Cover pot with parchment paper or damp kitchen towel and bring to boil. Reduce heat to low and simmer for 35 to 45 minutes. Turn the pears occasionally so they are evenly covered. When pears are done (knife point should easily pierce them) put pears and liquid into bowl and chill overnight. Next day, remove pears from liquid and set aside. Strain poaching liquid into pot and reduce on medium-low heat until it is a syrup; set syrup aside. Just before you serve, cut pears in half, remove core, and slice. Arrange into shape of a fan and drizzle with syrup. Serves 10.
